Fran's Apple Dumplings

In the "Frantics" column in the January 2009 issue of Cross-Stitch & Needlework magazine, Fran Ortmeyer whet our appetites with talk of her scrumptious apple dumplings. We are pleased to share her recipe with you, so you can enjoy the tasty treat.

Fran's Apple Dumplings
1 pie crust for a double-crust pie
6 tart apples, peeled and cored
Filling:
3/4 Cup sugar
2 tsp cinnamon
3 T butter
Syrup:
1 Cup sugar
2 Cups water
3 T butter
1/2 tsp cinnamon

Roll out crust to about 1/8" thick. Cut crust into six 8" squares. Place one apple on each square of crust. In a small bowl, combine cinnamon and sugar for filling. Fill core of each apple with cinnamon and sugar mixture and a dab of butter. Bring opposite points of crust up over the apple. Overlap and seal. Carefully place dumplings in a 9" x 13" baking dish, spaced apart. In a medium saucepan, combine syrup ingredients and boil for 3 minutes. Pour hot syrup over and around dumplings. Bake at 375 degrees for about 45 minutes. Enjoy!
